Zucchini Lasagna

Ingredients:

  • 2 medium zucchini
  • 200g ground meat
  • ½ cup tomato puree
  • ½ cup chopped tomatoes
  • 1 small onion, diced
  • 1 tbsp olive oil
  • 150 g ricotta cheese
  • ½ cup grated cheese
  • ¼  tsp black pepper
  • ¼ tsp chilli powder
  • ¼ tsp salt

*for 2 serving

 

Instructions:

 

  1. Preheat the oven to 200°C, and line a baking tray with parchment paper. Slice the zucchinis thinly, put onto the baking sheet and drizzle with olive oil. Bake for 10 minutes, then set aside.
  2. Cook the ground meat until it turns brown. Add onions and garlic with olive oil. Continue to cook until the onions are translucent. Add spices and chopped tomato with tomato puree. Mix and boil until the sauce becomes thick, then set aside the sauce.
  3. Layer bottom of a casserole with zucchini slices and spread some ricotta cheese. Then put 2-3 tablespoons of meat sauce. Sprinkle with grated cheese, then repeat the process. Sprinkle the top with grated cheese, and bake for 40-45 minutes until the cheese is melted and golden brown on top.
