Wild Salmon Crusted with Pecans

INGREDIENTS

  • 2 tbsps. of Parmesan cheese (grated)
  • ¾ tsp of salt
  • Black pepper
  • ¼ cup of finely chopped pecans
  • 2 tbsps. Italian breadcrumbs or panko
  • 1 lb. of non-skinned salmon fillets
  • 1 ½ tbsp maple syrup. or honey
  • 1 ½ tbsp. Dijon mustard

 

METHOD

Step 1:

Preparing the Salmon

Thaw the salmon, pat dry and then drizzle some pepper and salt on top. Mix a paste from honey and Dijon Mustard then smear it on the fillet/ fillets.

Preheat the oven.

Step 2:

Mixing up the Crust

Take the parmesan cheese and the pecans then mix with the Italian Panko. Drizzle it on the salmon then toss it into the oven for 12 – 16 minutes.

Step 3:

Serving

Remove when the middle section is cooked then serve while still hot.
