Stuffed Artichoke Bottoms -

Ingredients:

  • 4 artichoke bottoms
  • Juice of half a lemon
  • Juice of half an orange
  • 1 carrot, small diced
  • 1 cup peas, boiled
  • 1 onion, small diced
  • ⅓ cup olive oil
  • ½ tsp sugar
  • 1.5 teaspoons of salt
  • 1 cup of water

 *for 2 serving

 

Instructions:

  1. Heat the olive oil in a shallow pot, sauté the onion first, then add the carrots and continue sautéing. 
  2. Add the orange juice, lemon juice, salt, and pepper to the pot then mix it. 
  3. After the carrot and onion are slightly cooked, add the boiled peas and artichoke bottoms to the pot. Put the peas and carrot mixture on top of the artichoke bottoms then cover the lid. Cook for about 15-18 minutes over medium-low heat. 
  4. After it cools down, transfer the serving plate then drizzle olive oil on it.
  5. Bon appetit!
