Ingredients:

  • 1 cup cooked (⅓ cup uncooked) beluga lentils
  • 150 g firm tofu
  • 1/2 tbsp miso paste
  • 1/2 tsp nutritional yeast
  • 1/4 tsp ginger powder 
  • 1/4 tsp onion powder 
  • 1/4 tsp garlic powder 
  • 3 tbsp low sodium soy sauce
  • 1 tbsp sesame oil 
  • 1/3 cup red cabbage, thinly sliced 
  • 1 carrot, thinly sliced 
  • 1 tsp roasted sesame seed
  • 2 spring onion, roughly chopped 

 *for 1 serving

 

Instructions:

  1. Mix the soy sauce, sesame oil, miso paste, nutritional yeast, and spices in an oven-safe bowl. Mix the diced firm tofu into the mixture until completely covered. Bake for about 35 mins in a preheated oven at 180°C/355°F. 
  2. Arrange the beluga lentils, vegetables, and baked tofu in a serving bowl.
  3. Sprinkle the roasted sesame seeds on top.
