INGREDIENTS

Mexican Cilantro Crispy Salad Ingredients

  • 3 chopped Romaine hearts
  • 2 cups of baby spinach
  • ¼ cup of red onion slices
  • ½ cup of cherry tomatoes
  • 3-4 radishes
  • 1 cup of thawed corn kernels
  • 2 tbsps. of pepitas – salted and roasted pumpkin seeds
  • Taco Salad Dressing
  • Tortilla chips
  • Flakes of cotija cheese (or feta cheese)
  • Diced avocado

 

Taco Dressing Ingredients

  • ¼ cup of mayonnaise or sour cream
  • 2 pinches of salt
  • ½ cup of Vegan or Greek yogurt
  • ½ cup of red salsa
  • 1 tsp of hot sauce

 

METHOD

Step 1:

Preparing Taco Dressing

Mix the taco dressing ingredients thoroughly. Keep adding salt to taste.

Step 2:

Preparing the vegetables

Half the tomatoes, then take the radishes and onions then slice them evenly. Ensure the corns are thawed.

Season the radishes, corn, and tomatoes with salt.

 

Step 3:

Serving

Top your veggies with the tortillas. Drizzle the dressing then serve right away.
