Leek & Carrot with Brown Rice

Ingredients:

  • 1 kg leek, sliced diagonally
  • 2 carrots, sliced diagonally
  • 3 tbsp olive oil 
  • 1 orange, freshly squeezed
  • ½ lemon, freshly squeezed
  • ⅓ cup brown rice
  • 1 ½ tbsp tomato paste
  • Salt
  • Ground black pepper

 *for 4 serving

 

Instructions:

  1. Heat the olive oil in a shallow pot. Add the carrots in a pot and saute them for about 5 minutes on medium-high heat.
  2. Add the leeks to the pot and continue sauteing together until its half-tender for about 10 minutes. 
  3. Add the remaining ingredients to the pot, stir them and close the lid. Simmer it for about 30 minutes on medium-low heat, stir them . 
  4. You can serve warm or after it cools down.
