Green Gazpacho

INGREDIENTS

  • Honeydew melon 2 cups diced
  • English (seedless) cucumber 1 peeled and diced
  • Jalapeno pepper 1 seeded and coarsely chopped
  • Garlic 1 clove chopped
  • Avocado 1 peeled, pitted, and chopped
  • White balsamic vinegar ¼ cup
  • Lime juice 1 tbsp
  • Salt & pepper to taste

 

METHOD

 

Blend honeydew melon, cucumber, onion, avocado, jalapeno pepper, garlic, white balsamic vinegar, lime juice, salt, and black pepper in a blender until smooth. Adjust seasonings if desired and chill before serving.
