INGREDIENTS
Eggs, 4 large
Olive oil, 1tbsp
Spinach, 5 oz
Salt
Pepper
3 garlic cloves
METHOD
STEP 1:
Whisk the eggs and season with salt and pepper.
STEP 2:
In a skillet, heat the vegetable oil. Crush the garlic without removing the peel. Cook the garlic for 1 minute then remove the garlic.
STEP 3:
Chop the baby spinach and add it to the skillet. Mix and cook the spinach until it turns soft.
STEP 4:
Line a baking tray with parchment paper, about 8-inch (20 cm) diameter. Spray it with olive oil. Pour on the whisked eggs and add the cooked spinach.
STEP 5:
Bake for 20 minutes at 350 degrees F/175 degrees C.
