Greek Yogurt & Tuna Sandwiches

Ingredients:

 

  • 1 can drained tuna (75 g)
  • 2 tbsp sweet corn
  • 2 tbsp red bell pepper, small diced
  • 2 tbsp pickle, small diced
  • 2 tbsp red onion, small diced
  • 2 tbsp greek yogurt
  • ½ tbsp mustard
  • 1 tsp sriracha
  • 2 tbsp green onion, chopped
  • 1 tbsp dill, chopped
  • 4 bread slices

 

*for 2 serving

 

Instructions:

  1. Mix the tuna, sweet corn, diced bell pepper, pickle and red onion, greek yogurt, mustard and sriracha, chopped green onion and dill in a large mixing bowl. Set aside
  2. Toast the bread until golden brown. Arrange the lettuce on toasted bread and spread the tuna mixture on them. Put the other toasted bread on it and press lightly.
  3. Cut it diagonally to eat easily.
