Fig Crumble

Ingredients:

  • 1 cup whole wheat flour
  • 3 tbsp butter, cold
  • 1 medium egg
  • 2 tbsp date extract
  • ⅛ tsp salt
  • 2 handfuls of fig, sliced
  • 1 tbsp coconut sugar

*for 4 serving

 

Instructions:

  1. Pulse the flour, butter, egg, date extract and salt in a food processor until all ingredients are combined.
  2. Cover the dough with cling film and rest for about an hour in refrigerator.
  3. Meanwhile, combine the sliced figs and coconut sugar in a bowl. Set aside to soften.
  4. Take the dough from refrigerator and crumble the ¾ of the dough up into 22*22 cm ovenproof dish. Spread the fig mixture on it. Then crumble the remaining dough over the fig layer.
  5. Bake it until golden brown for about 25-30 minutes in the preheated oven at 180°C/355°F.
  6. Slice and serve it when it cools down.
