Falafel Salad with Tahini Dressing

Ingredients:

 

For the Falafels:

  • 200g cooked chickpeas
  • 1 small onion
    • 1 clove garlic
    • 2 tbsp olive oil
  • Juice of ½ lemon
    • Small bunch of parsley
    • 2 tbsp oat flour
  • ½ tsp corriander powder
  • ½ tsp salt
  • ¼ tsp chilli powder
  • ¼ tsp black pepper

For the Salad:

  • 4 cups salad greens
  • 1 cup cherry tomatoes, halved
  • 1 small avocado
  • 2 small cucumbers

For the dressing:

  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 2 tbsp water
  • 1 tsp olive oil
  • Pinch of salt
  • ¼ tsp cumin

 *for 2 serving

 

Instructions:

  1. Preheat the oven to 200°C. Then, put cooked chickpeas, 1 small onion, 1 clove of garlic, 2 tbsp olive oil, lemon juice, and parsley in a food processor.
  2. Pulse until it combines. It should be an uniform texture to shape with a spoon.
  3. Line a baking sheet with parchment paper. Scoop the dough with an ice cream spoon, and place on the baking sheet. Flat with a spatula or spoon. Then, bake the falafels for 25-30 minutes until golden brown. Set aside to cool down.
  4. For the dressing, put lemon juice, water, cumin, salt, and olive oil in a small bowl. Whisk together all the ingredients.
  5. Combine salad greens, tomatoes, cucumbers, and avocado in a salad bowl.
  6. Put the falafels on top, and drizzle the tahini dressing.
