STEP 1:

Apply olive oil on both sides of chicken breast. Season it with cumin, paprika, oregano, salt, and pepper. Place in a baking tray and bake for 20-25 minutes until cooked.
STEP 3:
Take a large bowl and mix chickpeas, spinach, and tomatoes.
Step 4:
For sauce, mix white vinegar, mustard, salt, and pepper. Mix it with spinach mixture.
Step 5:
Arrange spinach mixture on a plate top with chicken slices.
