Chicken Taco with Lettuce  -

Ingredients:

  • 175 g chicken breast, medium diced
  • 3 leaves of iceberg lettuce
  • ½ avocado, small diced
  • 3 cherry tomatoes, small diced
  • 8-10 slices pickled jalapeno
  • ¼ cup red cabbage, shredded
  • 1/4 tsp dried lime zest
  • 1/4 tsp cayenne
  • 1/8 tsp black pepper
  • 1/8 tsp onion powder 
  • 1/8 tsp garlic powder
  • 1/8 tsp coriander
  • 1/8 tsp cumin
  • Salt

*for 1 serving, 3 tacos

 

Instructions:

 

  1. Mix the chicken with olive oil and all of the spices until the chicken is completely covered with marination. Rest in the refrigerator for an hour.
  2. Cook the marinated chicken for about 8 minutes until all sides turn golden.
  3. Arrange all the ingredients in the lettuce in order. Squeeze the lime over the tacos.
