Chicken and Shrimp Burrito

INGREDIENTS

Burrito; Non-vegan

  • Shredded cooked chicken,
  • Nacho cheese
  • (15 ounce or 425 grams) can of corn
  • 1 cup of salsa (fresh pico de gallo)
  • Red onion
  • Roasted peppers
  • ½ tsp of salt
  • Sliced Avocado
  • 1 ½ cups of precooked or dry rice
  • Cherry tomatoes,
  • 15 ounce can (425 grams) of black beans
  • Chopped romaine
  • Sautéed shrimp

Chipotle ranch Ingredients

  • 2 tbsps. of adobo sauce from a can of chipotle chilies
  • ¼ cup of mayonnaise
  • 1 tsp of apple cider vinegar
  • ¼ tsp of salt and black pepper
  • ½ tsp each of, garlic powder, dried dill, and onion powder
  • ½ cup of plain Greek yogurt or whole milk yogurt

 

METHOD

Step 1:

Rice preparation

Whether it’s a precooked version or you’re preparing the normal white rice, sprinkle some olive oil and salt then use a fork to mix.

 

Step 2:

Salads and Veggies

Take the corn, and then mix them with the salsa and beans. Season with salt.

 

Next, slice both the cherry tomatoes and onions then dice the avocado.

 

Step 3:

Chipotle Ranch and Serving

Combine the ingredients of the ranch dressing thoroughly.

Top the veggies, corn, and black bean salad then chipotle dressing on the rice. Serve immediately.
