Ingredients:

 

  • 1 large bonito fish or round fish of your choice (~800 g), large sliced
  • 3 small potatoes, sliced
  • 1 large carrot, sliced
  • 3 tbsp parsley, chopped
  • 2 bay leaves
  • 6 garlic cloves
  • 1 large onion, sliced
  • 1 large tomato, sliced
  • 1 lemon, peeled and sliced
  • Salt
  • Ground black pepper
  • ¼ cup olive oil

*for 6 serving

 

Instructions:

  1. Arrange the onion in a cast-iron pot. Place the tomatoes on top of the onions then put the carrots on potatoes. 
  2. Arrange the bonito fish slices on carrots. Put the lemon slices on bonito fish slices. Add the garlic cloves to the pot. 
  3. Sprinkle pepper, half of the salt, and chopped parsley then pour the olive oil to the pot. 
  4. Place the tomato slices on top of the other ingredients and sprinkle remaining salt on tomatoes. 
  5. Cover the lid, and cook for about 40 minutes on medium-low heat. You can cook it in the oven for 50 minutes at 200°C/395°F, if you want. 
  6. Serve warm.
