Baked Pumpkin with Green Lentil

Ingredients:

  • 1 cup (dry) green lentil, boiled and drained
  • 750 g pumpkin, cut into big chunks
  • 2 tbsp olive oil
  • 2 garlic clove, minced
  • ⅛ tsp black pepper
  • ¼ tsp salt
  • ¼ tsp red pepper flakes
  • ¼ tsp cumin
  • ½ tsp cayenne
  • 1 lemon zest
  • ¼ cup water

 

*for 1 serving

 

Instructions:

  1. Place the pumpkin chunks in a baking tray lined with waxed paper. Drizzle a tablespoon of olive oil and sprinkle the salt on top. To make sure all sides are covered with oil, toss them well with your fingers.
  2. Baked it for about 30 mins in the preheated oven at 180°C/355°F, and toss them through halfway.
  3. Meanwhile, heat the olive oil in a large pan, add the onions and saute them until soft. Add the garlic, continue to saute for a few minutes. Then add the boiled green lentils, salt and black pepper to the pan. Saute it for about 5 minutes.
  4. Add remaining spices and water, stir them well and cover the lid and cook it until green lentils are slightly mushy and well combined with other ingredients.
  5. Place the baked pumpkins on a serving plate, then put a few spoonful of lentil mixture on it.
