Avocado Pasta

INGREDIENTS

 

8 oz uncooked dry pasta of any type

1 ripe avocado halved, seeded and peeled

1/4 cup olive oil

1/4 cup grated parmesan or romano cheese

1/4 cup any herbs

2 cloves garlic

2 tablespoons lime juice

Salt and ground black pepper to taste

 

 

METHOD

Step 1

Prepare your pasta according to the package instructions. Drain well.

Step 2

Blend the avocado, olive oil, parmesan cheese, garlic, herbs, and lime juice in a blender or food processor while the pasta is cooking.

Step 3

Mix your pasta with the avocado sauce.

Season with salt and pepper to taste and top with parmesan or romano cheese.
