Aubergine Pizza -

Ingredients:

  • 1 bell eggplant
  • 1 cup pizza sauce
  • ¼ cup olive oil
  • Salt, to taste
  • Pepper, to taste

For Topping:

  • 3 pieces of smoked turkey, thinly sliced 
  • ¼ cup capers
  • ¼ cup black olives, sliced
  • ¼ cup green olives, sliced
  • 1 ½ cup grated mozzarella
  • 8 leaves of fresh purple basil

*for 4 servings

 

Instructions:

 

  1. Cut the eggplants lengthwise into ½ cm thick slices. Rub with salt and oil, and set aside for about 10 min. Remove the moisture on the waiting eggplants with a paper towel.
  2. Heat the oven to 200°C.
  3. Place the aubergine slices on a baking tray lined with baking paper. Brush eggplants with olive oil and season with pepper. Bake for about 15 minutes. 
  4. Spread the pizza sauce on the baked eggplant slices and sprinkle the mozzarella.
  5. Then place smoked turkey pieces, olives, and capers on it. Bake until the cheeses are completely melted and turn golden for about 10 minutes.
  6. Take it out of the oven and serve warm with fresh purple basil on top.
  7. Bon appetit!
